Chicken Fried Rice Recipe

Makes 4 servings

1 tbsp. vegetable oil or cooking spray
1 lb boneless skinless chicken breast cut into bite-sized pieces (I used the tyson quick and easy diced chicken breast)
1 chicken bouilllon cube
3 tbsp. soy sauce
2 cups frozen vegetable blend (peas and carrots)- mine also had corn and green beans in it.
2 cups minute white rice, uncooked
2 cups water

Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until chicken is cooked through

Add bouillon cube, water, soy sauce and vegetables; stir. Bring to a boil

Stir in rice; cover. Reduce heat to low; cook 5 minutes. Stir. Season with additional soy sauce if desired.
